
Telem’s kitchen, like all of Aner’s kitchens, starts with the earth — the space between the beds, where you can get close, smell, and pick without harm.
Though we’re in the city, we’re the shortest way back to where it all begins. Vegetables are our stars — fresh, respected, and full of life.
There’s also a hint of sea and the depth of meat, but the heroes remain the vegetables. Light, joyful, vibrant — and above all, delicious.

I’m Aner Ben Rafael Furman, and I’ve been cooking in Israel’s kitchens for 20 years — picking what grows around me and cooking it.
The previous chapters I told as chef and owner of the restaurants Alter, Igra Rama, and Monar, and as chef and host of the TV show “The Meal of a Lifetime” on Kan 11.
